As the cherries pass through the civet’s digestive system, only the fleshy fruit pulp is broken down.
Enzymes in the civet’s stomach naturally reduce the proteins in the beans, which eliminates much of coffee’s inherent bitterness. The hard coffee beans remain intact and are excreted whole.
